Instructions
1.
Preheat your oven to 375°F (190°C).
2.
Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
3.
In a skillet over medium heat, sauté the diced onion and minced garlic until translucent (about 3-4 minutes).
4.
Add the lean ground beef to the skillet, breaking it apart with a spatula. Cook until browned (about 5-7 minutes).
5.
Stir in the diced tomatoes, cooked quinoa or brown rice, cumin, paprika, salt, and pepper. Mix well and let it simmer for 5 minutes.
6.
Spoon the beef mixture into each bell pepper, packing it tightly. If using, sprinkle cheese on top.
7.
Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 5-10 minutes until the peppers are tender and the cheese is melted.
8.
Garnish with fresh herbs before serving.

1 cup cooked quinoa or brown rice

1 small onion, diced

2 cloves garlic, minced

1 cup diced tomatoes (canned or fresh)

1 teaspoon cumin
8.
1 teaspoon paprika
9.
Salt and pepper to taste
10.
1/2 cup shredded low-fat cheese (optional)
11.
Fresh herbs (like parsley or cilantro) for garnish
