Breakfast for dinner kind of night

Instructions

  • 1.

    Preheat your oven to 375°F (190°C).

  • 2.

    Cut the tops off the bell peppers and remove the seeds and membranes.

  • 3.

    In a large bowl, mix the cooked quinoa, chopped spinach, egg whites (or eggs), black beans, diced tomatoes, cumin, garlic powder, salt, and pepper until well combined.

  • 4.

    Stuff each bell pepper with the mixture, pressing down gently to pack it in.

  • 5.

    Place the stuffed peppers upright in a baking dish and cover with foil.

  • 6.

    Bake for 25 minutes, then remove the foil and bake for an additional 5 minutes until the tops are slightly golden.

  • 7.

    Serve hot with a drizzle of hot sauce on top.

    4 large bell peppers (any color)

  • 2.

    1 cup cooked quinoa

  • 3.

    1 cup fresh spinach, chopped

  • 4.

    1 cup egg whites or 4 large eggs, beaten

  • 5.

    1/2 cup black beans, rinsed and drained

  • 6.

    1/2 cup diced tomatoes (canned or fresh)

  • 7.

    1 teaspoon cumin

  • 8.

    1 teaspoon garlic powder

  • 9.

    Salt and pepper to taste

  • 10.

    Hot sauce for serving
