Instructions
1.
Preheat your oven to 375°F (190°C).
2.
Cut the tops off the red bell peppers and remove the seeds and membranes.
3.
In a skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until translucent (about 3-4 minutes).

Stir in the chickpeas, spinach, cooked brown rice, cumin, paprika, salt, and pepper. Cook for another 5 minutes until the spinach wilts.
5.
Stuff each bell pepper with the chickpea mixture, packing it tightly.
6.
Place the stuffed peppers upright in a baking dish. Add a splash of water to the bottom of the dish to help steam the peppers.
7.
Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 5 minutes to slightly brown the tops.
8.
Garnish with fresh parsley before serving.

Salt and pepper to taste
11.
Fresh parsley for garnish
