Instructions

  • 1.

    In a large pot, brown the lean ground beef over medium heat for about 5-7 minutes, breaking it apart with a spoon until fully cooked.

    Add the diced bell peppers and cook for another 3-4 minutes until they soften.

  • 3.

    Stir in the black beans, corn, diced tomatoes, chili powder, cumin, and chopped spinach. Mix well.

  • 4.

    Bring the mixture to a simmer and let it cook for about 15-20 minutes, stirring occasionally.

  • 5.

    Season with salt and pepper to taste. If desired, sprinkle shredded cheese on top before serving.

  • 6.

    Serve hot with tortilla chips on the side.
