Instructions
1.
Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

In a pot, combine the rinsed rice and 1 1/4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed.

Once cooked, remove from heat and let it sit covered for 10 minutes. Then, transfer to a bowl and mix in rice vinegar, sugar, and salt. Allow to cool slightly.

Lay a sheet of nori on a bamboo sushi mat. Wet your hands to prevent sticking, then spread a thin layer of sushi rice over the nori, leaving a small border at the top.

Place slices of hamachi, chopped green onions, and any additional fillings in a line across the rice.
6.
Using the mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll.
7.
Slice the roll into bite-sized pieces using a sharp knife. Wipe the knife with a damp cloth between cuts for clean edges.
8.
Serve the sushi with wasabi, pickled ginger, and fresh pea pods on the side. Enjoy with a tangerine for a refreshing finish.
