“Sort of a take on Swedish meatballs. Extra Lean ground beef egg gluten free breadcrumbs for the meatballs. Bell pepper onion mushrooms and gf gnocchi for the other ingredients and the gravy is beef stock thickened with a cornstarch slurry and a tiny drizzle of heavy cream like 1 TBSP for the entire 3 servings of this dish.”

Instructions
1.
In a large bowl, combine the ground beef, egg, gluten-free breadcrumbs, salt, pepper, and thyme. Mix until well combined. (5 minutes)

Form the mixture into meatballs, about 1 inch in diameter. (5 minutes)

In a large skillet, heat a little oil over medium heat. Add the meatballs and cook until browned on all sides, about 10 minutes. Remove and set aside. (10 minutes)
4.
In the same skillet, add the bell pepper, onion, and mushrooms. Sauté until softened, about 5 minutes. (5 minutes)

Add the beef stock to the skillet and bring to a simmer. (2 minutes)
6.
In a small bowl, mix the cornstarch with a little water to create a slurry. Stir this into the simmering stock to thicken. (2 minutes)
7.
Add the meatballs back to the skillet along with the gluten-free gnocchi. Stir to combine and cook for an additional 5-10 minutes until everything is heated through. (10 minutes)
8.
Finish with a drizzle of heavy cream before serving. (1 minute)
