Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and bake for 30-35 minutes, or until tender.

  • 3.

    While the sweet potatoes are baking, prepare the cottage cheese by mixing in the cinnamon, salt, and pepper.

  • 4.

    If using spinach, sauté it in a non-stick pan for 2-3 minutes until wilted.

  • 5.

    Once the sweet potatoes are done, slice them in half and scoop out a little of the flesh to create a small well.

  • 6.

    Top each sweet potato half with a generous scoop of the cottage cheese mixture and add the sautéed spinach on the side.

  • 7.
