“The sweet potato recipe! I made a couple of changes. I couldnt find any tahini when I was at the grocery store today but I had sunflower seeds at home so I ground a couple Tablespoons of them in my spice grinder and added a little bit of Greek yogurt and lemon juice to make it saucy . I also added some ground turkey sausage that I seasoned with Zaatar. I eliminated the spinach and pomegranate seeds I finished it with a sprinkle of fresh basil. This was a great recommendation its delicious. I was trepidatious at first because I dont love sweet potatoes. I have learned to eat them roasted or in savory breakfast hash but I was willing to give baked another shot since this recipe was overall savory. Would definitely make it again!”

Instructions
1.
Preheat your oven to 400°F (200°C).
2.
Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and bake for 40-45 minutes, or until tender.

While the sweet potatoes are baking, heat a skillet over medium heat. Add the ground turkey sausage and cook until browned, about 7-10 minutes. Season with za'atar, salt, and pepper.

In a separate bowl, mix the ground sunflower seeds, Greek yogurt, and lemon juice until smooth. Adjust seasoning as needed.

In the last 10 minutes of baking, toss the chickpeas with a little olive oil spray, salt, and pepper, and add them to the baking sheet to roast alongside the sweet potatoes.

Once everything is cooked, slice the sweet potatoes in half and fluff the insides with a fork. Top with the turkey sausage, roasted chickpeas, and drizzle with the yogurt sauce. Finish with fresh basil.
