The sweet potato recipe! I made a couple of changes. I couldnt find any tahini when I was at the grocery store today but I had sunflower seeds at home so I ground a couple Tablespoons of them in my spice grinder and added a little bit of Greek yogurt and lemon juice to make it saucy . I also added some ground turkey sausage that I seasoned with Zaatar. I eliminated the spinach and pomegranate seeds I finished it with a sprinkle of fresh basil. This was a great recommendation its delicious. I was trepidatious at first because I dont love sweet potatoes. I have learned to eat them roasted or in savory breakfast hash but I was willing to give baked another shot since this recipe was overall savory. Would definitely make it again!

Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and bake for 40-45 minutes, or until tender.

  • 3.

    While the sweet potatoes are baking, heat a skillet over medium heat. Add the ground turkey sausage and cook until browned, about 7-10 minutes. Season with za'atar, salt, and pepper.

  • 4.

    In a separate bowl, mix the ground sunflower seeds, Greek yogurt, and lemon juice until smooth. Adjust seasoning as needed.

  • 5.

    In the last 10 minutes of baking, toss the chickpeas with a little olive oil spray, salt, and pepper, and add them to the baking sheet to roast alongside the sweet potatoes.

  • 6.

    Once everything is cooked, slice the sweet potatoes in half and fluff the insides with a fork. Top with the turkey sausage, roasted chickpeas, and drizzle with the yogurt sauce. Finish with fresh basil.

    1 can (15 oz) chickpeas, drained and rinsed

    2 tablespoons sunflower seeds, ground

    2 tablespoons lemon juice

    1 tablespoon za'atar seasoning

  • 8.

    1/4 cup fresh basil, chopped

  • 9.

    Salt and pepper to taste
