Instructions

Preheat your oven to 400°F (200°C).

Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and bake for 30-35 minutes, or until tender.

While the sweet potatoes are baking, chop the pistachios and set aside.

Once the sweet potatoes are done, let them cool slightly, then slice them open.

Spoon the cottage cheese into the sweet potato halves, sprinkle with pistachios, and add cinnamon, salt, and pepper to taste.
