Instructions
1.
In a large skillet, heat olive oil over medium heat (about 2 minutes).

Add the lean ground turkey or chicken, breaking it apart with a spatula. Cook until browned (about 5-7 minutes).
3.
Stir in the shredded cabbage, carrots, green onions, garlic powder, ground ginger, and black pepper. Cook for another 5 minutes until the vegetables are tender.
4.
Add the soy sauce and mix well, cooking for an additional 2 minutes.
5.
Serve the mixture in bowls with baked tortilla chips on the side for scooping.
