Another taco bowl! Finally got some good spinach plus the ground turkey and beans.

Instructions

  • 1.

    In a skillet over medium heat, cook the ground turkey until browned, about 5-7 minutes.

  • 2.

    Add the taco seasoning, black beans, and corn to the skillet. Stir well and cook for another 5 minutes until heated through.

  • 3.

    In a large bowl, layer the spinach as the base.

  • 4.

    Top the spinach with the turkey and bean mixture.

  • 5.

    Sprinkle with shredded cheese and dollop with sour cream.

  • 6.

    Add corn chips on top for crunch and serve immediately.

    1 lb ground turkey (lean)

  • 2.

    1 can black beans, rinsed and drained

  • 3.

    2 cups fresh spinach, chopped

  • 4.

    1 cup corn (fresh or frozen)

  • 5.

    1/2 cup low-fat shredded cheese

  • 6.

    1/2 cup low-fat sour cream

  • 7.

    1 cup corn chips (baked for a healthier option)

  • 8.

    1 tsp taco seasoning (low sodium)

  • 9.

    Salt and pepper to taste
