Instructions

  • 1.

    Heat olive oil in a large skillet over medium heat (about 2 minutes).

    Add diced onion and garlic, sauté until softened (about 3-4 minutes).

    Add ground turkey, breaking it apart with a spatula, and cook until browned (about 5-7 minutes).

  • 4.

    Stir in taco seasoning, black beans, and diced tomatoes. Cook for another 5 minutes until heated through.

    Add chopped spinach and cook until wilted (about 2 minutes).

  • 6.

    Season with salt and pepper to taste, then remove from heat.
