Instructions
1.
Preheat your oven to 375°F (190°C).
2.
In a skillet, cook the lean ground turkey or chicken over medium heat until browned, about 5-7 minutes.
3.
Add the cumin, chili powder, salt, and pepper to the meat, stirring well.
4.
In a large bowl, combine the cooked meat, refried beans, brown rice, and spinach.
5.
Spread a thin layer of salsa on the bottom of a baking dish.
6.
Fill each tortilla with the meat mixture, roll them up, and place them seam-side down in the baking dish.
7.
Top the enchiladas with the remaining salsa and sprinkle with cheese.
8.
Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly.
9.
Let cool for a few minutes before serving.
