Instructions
1.
In a skillet over medium heat, cook the lean ground beef until browned, about 5-7 minutes. Drain excess fat if necessary.

While the beef is cooking, prepare the avocado dressing by blending the avocado, cilantro, lime juice, salt, and pepper until smooth.

Warm the corn tortillas in a separate pan or microwave until pliable.

Assemble the tacos by placing a layer of lettuce and spinach on each tortilla, followed by the cooked ground beef, a slice of cheese, and a dollop of mayonnaise.

Top with chopped onions, diced tomatoes, corn, black beans, green olives, and green onions.
6.
Drizzle the avocado dressing over the tacos and serve with a side salad of mixed greens, corn, black beans, and tortilla crisps.
