Tacos with corn tortillas and lean ground beef

Off to a great start! The lean beef provides the protein you need and corn tortillas are a healthier option compared to flour ones I also see some berries and beans for added fiber lovely!

Instructions

  • 1.

    In a skillet over medium heat, cook the lean ground beef until browned, about 5-7 minutes. Drain any excess fat.

  • 2.

    Add the chopped spinach to the skillet and cook for an additional 2-3 minutes until wilted.

  • 3.

    Warm the corn tortillas in a separate pan or microwave for about 30 seconds until pliable.

  • 4.

    Assemble the tacos by placing a portion of the beef and spinach mixture on each tortilla.

  • 5.

    Top with shredded cheese, salsa, and a side of black beans.

  • 6.

    Serve with fresh raspberries on the side for a sweet finish.

    1 cup fresh spinach, chopped
