Instructions
1.
In a skillet over medium heat, cook the lean ground beef until browned, about 5-7 minutes. Drain any excess fat.
2.
Add the chopped spinach to the skillet and cook for an additional 2-3 minutes until wilted.
3.
Warm the corn tortillas in a separate pan or microwave for about 30 seconds until pliable.
4.
Assemble the tacos by placing a portion of the beef and spinach mixture on each tortilla.
5.
Top with shredded cheese, salsa, and a side of black beans.
6.
Serve with fresh raspberries on the side for a sweet finish.

1 cup black beans, rinsed and drained

1/2 cup shredded low-fat cheese

1 cup salsa (low-sugar)

1 cup raspberries (for serving)
