Instructions
1.
In a large skillet, cook the ground chicken over medium heat until browned, about 5-7 minutes.

Add the diced green peppers, corn, and black beans to the skillet. Cook for an additional 5 minutes until the vegetables are tender.
3.
Stir in the salsa and season with salt and pepper. Cook for another 3-5 minutes until heated through.
4.
If using spinach, add it to the skillet and cook until wilted, about 2 minutes.
5.
Warm the tortillas in a separate pan or microwave.
6.
Assemble the tacos by placing the chicken mixture on each tortilla and topping with shredded cheese.
