Instructions

  • 1.

    Heat olive oil in a skillet over medium heat (about 2 minutes).

  • 2.

    Add the ground turkey or chicken and cook until browned (about 5-7 minutes).

  • 3.

    Stir in taco seasoning, salt, and pepper, and cook for an additional 2 minutes.

  • 4.

    Warm the cauliflower tortillas in a separate pan for about 1-2 minutes on each side.

  • 5.

    Assemble the tacos by placing arugula on each tortilla, followed by the cooked turkey/chicken mixture.

  • 6.

    Top with low-fat Greek yogurt, a sprinkle of Mexican cheese, and avocado slices.

  • 7.

    Serve immediately and enjoy your healthy taco!
