Taco salad but I ran out of tortilla chips so I made croutons with leftover bread. Includes cabbage carrots tomato green onion 4oz ground Turkey homemade thousand island and a sprinkle of cheese.

Instructions

  • 1.

    Preheat your oven to 375°F (190°C).

  • 2.

    Toss the cubed bread with a little olive oil and seasonings of your choice. Spread on a baking sheet and bake for 10-15 minutes until golden brown.

  • 3.

    In a large skillet, cook the ground turkey over medium heat until browned, about 7-10 minutes. Drain any excess fat.

  • 4.

    Add the chopped cabbage, tomatoes, bell pepper, celery, carrots, and green onions to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.

  • 5.

    Remove from heat and stir in the homemade Thousand Island dressing.

  • 6.

    Serve the turkey and vegetable mixture in bowls, topped with croutons and shredded cheese.

    1/2 cup homemade Thousand Island dressing (low-fat)

  • 10.

    2 cups whole grain bread (for croutons), cubed
