“Taco salad but I ran out of tortilla chips so I made croutons with leftover bread. Includes cabbage carrots tomato green onion 4oz ground Turkey homemade thousand island and a sprinkle of cheese.”

Instructions
1.
Preheat your oven to 375°F (190°C).
2.
Toss the cubed bread with a little olive oil and seasonings of your choice. Spread on a baking sheet and bake for 10-15 minutes until golden brown.
3.
In a large skillet, cook the ground turkey over medium heat until browned, about 7-10 minutes. Drain any excess fat.
4.
Add the chopped cabbage, tomatoes, bell pepper, celery, carrots, and green onions to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.
5.
Remove from heat and stir in the homemade Thousand Island dressing.
6.
Serve the turkey and vegetable mixture in bowls, topped with croutons and shredded cheese.
