Instructions

  • 1.

    1. In a bowl, mix soy sauce, honey (if using), rice vinegar, sesame oil, garlic, and ginger to create the teriyaki marinade.

  • 2.

    2. Add the chicken thighs to the marinade and let them sit for at least 10 minutes (or up to 2 hours in the fridge for more flavor).

  • 3.

    3. While the chicken marinates, steam the broccoli and cabbage until tender, about 5-7 minutes.

  • 4.

    4. Heat a non-stick skillet over medium-high heat. Remove chicken from the marinade (reserve the marinade) and cook for 5-7 minutes on each side until cooked through.

    5. Pour the reserved marinade into the skillet and let it simmer for 2-3 minutes until slightly thickened.

  • 6.

    6. Serve the teriyaki chicken over the steamed vegetables, garnished with sesame seeds and green onions.

    1 lb (450g) boneless, skinless chicken thighs

    1/4 cup low-sodium soy sauce

  • 3.

    2 tablespoons honey or maple syrup (optional for sweetness)

  • 4.

    1 tablespoon rice vinegar

  • 5.

    1 tablespoon sesame oil

  • 6.

    2 cloves garlic, minced

  • 7.

    1 teaspoon fresh ginger, grated

  • 8.

    2 cups broccoli florets

  • 9.

    2 cups cabbage, shredded

  • 10.

    1 tablespoon sesame seeds (for garnish)

  • 11.

    1 tablespoon green onions, chopped (for garnish)
