Instructions

1. Boil 2 cups of water in a pot and add the Thai rice noodles. Cook according to package instructions (about 5-7 minutes) until tender. Drain and set aside.

2. In a non-stick skillet, scramble the egg over medium heat until fully cooked. Remove and set aside.

3. In the same skillet, add the chopped tofu and sauté until golden brown (about 5 minutes).
