Instructions

1. Preheat a non-stick skillet over medium heat and add olive oil.

2. Season the tilapia fillets with salt and pepper, then cook for about 4-5 minutes on each side until golden and cooked through.

3. While the fish is cooking, prepare the salad by combining spinach, cherry tomatoes, and mushrooms in a large bowl.

4. Once the tilapia is done, place it on top of the salad mixture.

5. Drizzle the low-fat dressing over the salad and toss gently to combine.
