Instructions
1.
1. Begin by pressing the tofu to remove excess moisture. Cut it into bite-sized cubes.

2. Heat olive oil in a large skillet or wok over medium-high heat.

3. Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.

4. In the same skillet, add garlic and ginger, sautéing for 1 minute until fragrant.

5. Add broccoli, carrots, mushrooms, and red bell pepper. Stir-fry for about 5-7 minutes until vegetables are tender but still crisp.

6. Return the tofu to the skillet, add soy sauce, and stir to combine. Cook for an additional 2-3 minutes.

7. Season with salt and pepper to taste, then serve hot.
