Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).
2.
Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
3.
Add cubed tofu and cook for 5 minutes, stirring occasionally until golden brown.
4.
Add broccoli, carrots, mushrooms, and celery to the skillet. Stir-fry for another 5 minutes until vegetables are tender-crisp.
5.
Pour in the soy sauce, and season with salt and pepper. Stir well to combine and cook for an additional 2 minutes.
6.
Serve hot and enjoy your healthy tofu and broccoli dish!

1 block (14 oz) firm tofu, drained and cubed

2 cups broccoli florets

1 cup carrots, sliced
4.
1 cup mushrooms, sliced
5.
1 cup celery, chopped
6.
2 tablespoons low-sodium soy sauce

1 tablespoon olive oil
8.
2 cloves garlic, minced
9.
1 teaspoon ginger, grated
10.
Salt and pepper to taste
