Instructions
1.
1. Heat olive oil in a non-stick skillet over medium heat.

2. Add crumbled tofu to the skillet and season with garlic powder, onion powder, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until heated through and slightly crispy.

3. In a large bowl, combine mixed greens, diced avocado, and crumbled feta.

4. Drizzle lemon juice over the salad and toss gently to combine.

5. Top the salad with the scrambled tofu and serve immediately.

1 block (14 oz) firm tofu, drained and crumbled
2.
1 ripe avocado, diced
3.
1 cup feta cheese, crumbled
4.
4 cups mixed greens (spinach, arugula, etc.)

1 tablespoon olive oil
6.
1 tablespoon lemon juice
7.
1 teaspoon garlic powder
8.
1 teaspoon onion powder
9.
Salt and pepper to taste
