Instructions

    Heat olive oil in a large skillet over medium heat. Add diced onion and bell pepper, sautéing for about 5 minutes until softened.

    Add minced garlic, cumin, paprika, salt, and pepper. Cook for another 2 minutes until fragrant.

  • 3.

    Crumble the pressed tofu into the skillet and stir to combine. Cook for about 5 minutes until the tofu is heated through.

  • 4.

    Pour in the diced tomatoes and stir well. Let simmer for 10 minutes, allowing the flavors to meld.

    Toast the whole grain bread while the shakshuka simmers.

  • 6.

    Serve the tofu shakshuka in bowls, topped with crispy onions, vegan cheese, and fresh mint. Enjoy with toasted bread on the side.
