Instructions
1.
1. Preheat your oven to 400°F (200°C).

2. Cut the pressed tofu into cubes and toss with 1 tablespoon of olive oil, garlic powder, onion powder, salt, and pepper.
3.
3. Spread the tofu cubes on a baking sheet and bake for 20 minutes, flipping halfway through until golden brown.

4. While the tofu is baking, heat the remaining olive oil in a large skillet over medium heat.

5. Add the chopped kale and sauté for about 5 minutes until wilted.

6. Stir in the sun-dried tomatoes and cooked wheat berries, cooking for an additional 2-3 minutes.

7. Once the tofu is done, add it to the skillet and mix everything together.

8. Drizzle with balsamic vinegar if desired, and serve warm.

1 block (14 oz) firm tofu, drained and pressed
2.
2 cups kale, chopped
3.
1 cup cooked wheat berries
4.
1/2 cup sun-dried tomatoes, chopped
5.
2 tablespoons olive oil
6.
1 teaspoon garlic powder
7.
1 teaspoon onion powder
8.
Salt and pepper to taste
9.
1 tablespoon balsamic vinegar (optional)
