Instructions
1.
Press the tofu for 15 minutes to remove excess moisture, then cut it into cubes.
2.
In a large skillet, heat sesame oil over medium heat. Add minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
3.
Add the cubed tofu to the skillet and cook for about 5 minutes, turning occasionally until golden brown.
4.
Stir in the sliced shiitake mushrooms and cook for another 3-4 minutes until they soften.
5.
Add the chopped bok choy and soy sauce, cooking for an additional 2-3 minutes until the bok choy is wilted.
6.
Season with salt and pepper to taste, and sprinkle with sesame seeds if desired. Serve warm.
