Tofu and cauliflower in homemade orange sauce (10grams protein) 1/2 cup fruit and 1 slice cheesy thin crust bread (probably didnt need that but I had room for it according to my fitness pal log). Im struggling a bit with feeling like I need to give up all not super healthy foods so I ate 1 piece.

Instructions

  • 1.

    1. Heat olive oil in a large skillet over medium heat.

    2. Add the sliced onion and cook until translucent, about 3-4 minutes.

  • 3.

    3. Add the diced red bell pepper and cauliflower florets, cooking for another 5-7 minutes until tender.

  • 4.

    4. Stir in the cubed tofu and cook for an additional 5 minutes until heated through.

    5. Pour in the homemade orange sauce and stir to coat all ingredients evenly. Cook for another 2-3 minutes.

  • 6.

    6. If using, add the spinach and cook until wilted, about 1-2 minutes.

  • 7.

    7. Serve the tofu mixture over a bed of cooked brown rice.

    1 red bell pepper, diced

    1 onion, sliced

    1 cup brown rice, cooked

    1/2 cup homemade orange sauce (low sugar)

  • 7.

    1 cup spinach (optional for added fiber)

  • 8.

    1 tablespoon olive oil

  • 9.

    Salt and pepper to taste
