Cauliflower and lentil pasta with tofu and Brussels sprouts cooked in a little olive oil

Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Cut the tofu into cubes and toss with 1 tablespoon of olive oil, garlic powder, onion powder, salt, and pepper.

  • 3.

    Spread the tofu on a baking sheet and bake for 20 minutes, flipping halfway through.

  • 4.

    While the tofu is baking, cook the cauliflower and lentil pasta according to package instructions. Drain and set aside.

  • 5.

    In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the Brussels sprouts and sauté for about 5-7 minutes until they are tender and slightly browned.

  • 6.

    Add the cooked pasta and baked tofu to the skillet with the Brussels sprouts. Drizzle with soy sauce and toss everything together until well combined.

  • 7.

    2 cups Brussels sprouts, halved

    1 teaspoon garlic powder

  • 7.

    1 teaspoon onion powder

  • 8.

    1 tablespoon soy sauce (low sodium)
