Good update Mary. Tofu is always a great source of lean protein and the veggies offer a high amount of fiber as well. Lets keep it going!

Instructions

  • 1.

    1. Start by cooking the corn on the cob until tender, then let it cool and remove the kernels.

  • 2.

    2. In a large bowl, combine the diced tomato, cucumber, and corn kernels.

  • 3.

    3. Add the cubed firm tofu to the bowl.

  • 4.

    4. In a small bowl, whisk together the organic olive oil, Earth Balance, salt, and pepper.

  • 5.

    5. Drizzle the dressing over the salad and toss gently to combine.

  • 6.

    6. If using, add fresh spinach or mixed greens for extra fiber and toss again.

  • 7.

    7. Serve immediately or chill in the refrigerator for 30 minutes for a refreshing cold salad.
