Instructions
1.
1. Start by pressing the tofu to remove excess moisture. Cut it into cubes.

2. In a non-stick skillet, sauté the tofu over medium heat for about 5-7 minutes until golden brown. Set aside.

3. In the same skillet, add broccoli and a splash of water. Cover and steam for 3-4 minutes until tender.

4. In a large bowl, combine the mixed greens, corn, green bell peppers, pickled onions, sliced carrots, and sautéed tofu.

5. Drizzle with low-sugar dressing and toss gently to combine.
6.
6. Top with shredded cheese and serve immediately.

1 block firm tofu, drained and pressed

2 cups broccoli florets
3.
1 cup corn (fresh or canned)
4.
1 cup green bell peppers, sliced
5.
1 cup pickled onions
6.
1 cup sliced carrots
7.
1/2 cup shredded low-fat cheese
8.
2 tablespoons low-sugar dressing or sauce
9.
4 cups mixed greens (spinach, lettuce, etc.)
