Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    In a bowl, mix the cubed tofu with lemongrass paste, soy sauce, olive oil, salt, and pepper. Let it marinate for 10 minutes.

  • 3.

    Spread the marinated tofu on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown, flipping halfway through.

  • 4.

    While the tofu is baking, prepare the salad. In a large bowl, combine spinach, red cabbage, carrots, cucumber, red bell pepper, and green bell pepper.

  • 5.

    Once the tofu is done, let it cool slightly before adding it to the salad.

  • 6.

    Toss everything together and sprinkle with sesame seeds if desired. Serve immediately or chill for later.

    14 oz firm tofu, pressed and cubed

    2 tablespoons lemongrass paste

  • 3.

    1 tablespoon soy sauce (low sodium)

  • 4.

    1 tablespoon olive oil

  • 5.

    2 cups spinach, chopped

  • 6.

    1 cup red cabbage, shredded

  • 7.

    1 cup carrots, grated

  • 8.

    1 cup cucumber, sliced

  • 9.

    1 cup red bell pepper, diced

  • 10.

    1 cup green bell pepper, diced

  • 11.

    1 tablespoon sesame seeds (optional)

  • 12.

    Salt and pepper to taste
