Instructions

1. In a large skillet, heat a small amount of olive oil spray over medium heat.

2. Add the diced onion and bell pepper, sautéing for about 3-4 minutes until softened.

3. Add the sliced mushrooms and cook for another 2-3 minutes until they release their moisture.

4. In a bowl, whisk the eggs and season with salt and pepper.

5. Pour the eggs into the skillet, stirring gently to combine with the vegetables and ham.

6. Cook until the eggs are just set, about 5-7 minutes, stirring occasionally.
