Youve already achieved half of your weekly target and its only Thursday As you know the brown rice and cucumbers are a great source of fiberand the tuna provides lean protein and the small amount of mayonnaise adds a bit of healthy fat. Plus the curry powder is a flavorful way to spice things up without adding extra calories

Instructions

  • 1.

    In a large bowl, combine the drained tuna, cooked brown rice, and diced cucumbers.

  • 2.

    Add the low-fat mayonnaise and curry powder, mixing well to combine all ingredients.

  • 3.

    If using, fold in the fresh spinach for added fiber.

  • 4.

    Season with salt and pepper to taste.

  • 5.

    Serve chilled or at room temperature.
