Instructions

  • 1.

    In a bowl, combine the drained tuna, olive oil, lemon juice, salt, and pepper. Mix well.

  • 2.

    On each Wasa cracker, spread a layer of cottage cheese.

  • 3.

    Top the cottage cheese with the tuna mixture.

  • 4.

    Add halved cherry tomatoes on top.

  • 5.

    If desired, add fresh spinach or mixed greens for extra fiber.

  • 6.

    Serve immediately and enjoy!
