Instructions
1.
In a large bowl, combine the drained tuna and chickpeas. Use a fork to break up the tuna and mash some of the chickpeas for a creamier texture (about 2 minutes).
2.
Add the Greek yogurt, Dijon mustard, lemon juice, diced celery, diced red bell pepper, and chopped red onion to the bowl.
3.
Mix everything together until well combined (about 2-3 minutes).
4.
Season with salt and pepper to taste.
5.
Serve on a bed of fresh spinach leaves or enjoy it on its own.

1/2 cup Greek yogurt (low-fat)

1 tablespoon Dijon mustard

1/4 cup chopped red onion
9.
Salt and pepper to taste
10.
