Instructions

In a medium bowl, combine the drained tuna, Greek yogurt, Dijon mustard, diced celery, and diced red onion. Mix well until all ingredients are combined (about 2 minutes).

Season the mixture with salt and pepper to taste.

Lay out the slices of whole grain bread and place a handful of fresh spinach on one slice.
4.
Spoon the tuna mixture generously over the spinach, then top with the second slice of bread.
5.
Cut the sandwich in half and serve immediately, or wrap it up for a healthy meal on the go.
