Instructions
1.
In a medium bowl, combine the drained tuna, Greek yogurt, Dijon mustard, diced celery, diced red onion, lemon juice, salt, and pepper. Mix well until all ingredients are combined (about 3 minutes).
2.
Lay out the whole grain bread slices on a clean surface.
3.
Spread the tuna mixture evenly on two slices of bread (about 1/2 cup per slice).
4.
Top with spinach or mixed greens and cucumber slices.
5.
Place the remaining slices of bread on top to form sandwiches.
6.
Cut each sandwich in half and serve immediately or wrap for later.
Ingredients

2 cans of tuna in water, drained
2.
4 slices of whole grain bread
3.
1/4 cup Greek yogurt (as a healthier mayo substitute)
4.
1 tablespoon Dijon mustard
5.
1/2 cup diced celery
6.
1/4 cup diced red onion
7.
1 tablespoon lemon juice
8.
Salt and pepper to taste
9.
1 cup spinach or mixed greens
10.
1 cucumber, sliced
