Instructions
1.
In a medium bowl, combine the drained tuna, chopped celery, mayonnaise, and Dijon mustard (if using). Mix well until combined. (2 minutes)
2.
Season the mixture with salt and pepper to taste. (1 minute)
3.
Lay out the whole grain bread slices on a clean surface. (1 minute)
4.
Spread an even amount of the tuna mixture onto two slices of bread. (2 minutes)
5.
Top with fresh spinach leaves if desired, then place the remaining slices of bread on top to form sandwiches. (2 minutes)
6.
Cut the sandwiches in half and serve immediately, or wrap them for later. (1 minute)

2 tablespoons of low-fat mayonnaise

1 cup of chopped celery
5.
