If youre struggling with wanting to eat much try to focus on small frequent meals or snacks throughout the day to keep your energy levels up.”
Instructions
1.
1. Start by toasting the whole grain bread slices lightly for added texture (optional).
2.
2. In a bowl, mash the ripe avocado and season with salt and pepper.
3.
3. Spread a generous layer of mashed avocado on four slices of bread.
4.
4. Layer the sliced turkey evenly over the avocado.
5.
5. Add spinach, cucumbers, bell peppers, and red onion on top of the turkey.
6.
6. If desired, spread mustard on the remaining four slices of bread and place them on top to complete the sandwich.
7.
7. Cut the sandwiches in half and serve immediately.

1 pound lean turkey breast, sliced

1 ripe avocado, mashed
4.
1 cup spinach leaves
5.
1 cup sliced cucumbers
6.
1 cup sliced bell peppers (red, yellow, or green)
7.
1/2 cup sliced red onion
8.
Salt and pepper to taste
9.
1 tablespoon mustard (optional)
