Instructions
1.
1. Start by toasting the whole grain bread slices lightly for added texture.
2.
2. Spread a thin layer of mustard or hummus on one side of each slice of bread.
3.
3. Layer the turkey or chicken deli meat evenly on four slices of bread.
4.
4. Add a slice of low-fat cheese on top of the meat.
5.
5. Place sliced avocado and a handful of spinach or mixed greens on top.
6.
6. Season with salt and pepper to taste.
7.
7. Top with the remaining slices of bread, cut in half, and serve immediately.

2 ripe avocados, sliced

1 cup spinach or mixed greens
