Instructions
1.
1. Start by toasting the wholegrain bagels until golden brown (about 3-4 minutes).

2. While the bagels are toasting, scramble the eggs in a non-stick skillet over medium heat. Season with salt and pepper (about 5 minutes).

3. In a small bowl, mash the avocado and season with a pinch of salt.

4. Once the bagels are toasted, spread the mashed avocado on the bottom half of each bagel.

5. Layer the turkey slices on top of the avocado, followed by the scrambled eggs.

6. Top with cucumber slices and drizzle with ketchup if desired.

7. Place the top half of the bagel on the sandwich and serve immediately.
