Instructions

1. Start by toasting the whole grain bread slices until golden brown (about 3-5 minutes).

2. While the bread is toasting, cut the avocados in half, remove the pit, and scoop the flesh into a bowl.

3. Mash the avocado with a fork and season with a pinch of salt and pepper if desired.

4. Once the bread is toasted, spread a generous layer of mashed avocado on four slices.

5. Layer the turkey or ham on top of the avocado, followed by slices of tomato and a handful of spinach.

6. Spread mustard on the remaining four slices of bread and place them on top to complete the sandwich.

7. Cut the sandwiches in half and serve immediately.
