Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add minced garlic and diced carrots, sauté for 3-4 minutes until softened.

Add ground turkey, cooking until browned (about 5-7 minutes).

Stir in crushed tomatoes, salt, and pepper. Simmer for 10 minutes.
5.
In the last 2 minutes, add zoodles and kale, stirring until just tender.
6.
Serve hot, garnished with fresh basil and Parmesan cheese if desired.

2 medium zucchinis (spiralized into zoodles)
3.
1 cup chopped kale
4.
1 cup diced carrots
5.
1 can (14 oz) crushed tomatoes (no added sugar)
6.
1/4 cup grated Parmesan cheese (optional)
7.
1/4 cup fresh basil (chopped)
8.
2 cloves garlic (minced)
9.
1 tablespoon olive oil
10.
Salt and pepper to taste
