Instructions
1.
Heat olive oil in a large pot over medium heat (about 2 minutes).

Add chopped onions and bell peppers, sauté until softened (about 5 minutes).
3.
Stir in minced garlic and cook for another minute.
4.
Add ground turkey, breaking it apart with a spoon, and cook until browned (about 7-10 minutes).

Stir in chili powder, cumin, paprika, salt, and pepper, cooking for another minute to release flavors.
6.
Add diced tomatoes, black beans, kidney beans, and chicken broth. Bring to a boil.
7.
Reduce heat and let simmer for 20 minutes, stirring occasionally.
8.
If using, stir in spinach just before serving until wilted (about 2 minutes).

2 cups low-sodium chicken broth

2 tbsp chili powder

1 tsp cumin

1 tsp paprika
12.
Salt and pepper to taste

1 tbsp olive oil
14.
1 cup spinach (optional for added fiber)
