Instructions
1.
In a large pot, heat a splash of water or low-sodium broth over medium heat. Add the chopped onion and garlic, sautéing for about 3-4 minutes until softened.

Add the ground turkey to the pot, breaking it up with a spoon. Cook until browned, about 5-7 minutes.

Stir in the diced red bell pepper, chili powder, cumin, salt, and pepper. Cook for another 2-3 minutes until the pepper softens.

Add the black beans, diced tomatoes, and chicken broth. Bring to a simmer and let cook for 15-20 minutes, stirring occasionally.
5.
If using, stir in fresh spinach just before serving for added fiber.
6.
Serve the chili over a bed of cooked brown rice and top with crumbled feta cheese if desired.

1 onion, chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon cumin

Salt and pepper to taste

1/4 cup feta cheese, crumbled (optional)
13.
Fresh spinach (optional, for added fiber)
