Instructions
1.
Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until translucent (about 3-4 minutes).

Add the ground turkey to the pot, breaking it apart with a spoon. Cook until browned (about 5-7 minutes).

Stir in the diced red bell pepper, carrots, zucchini, and green beans. Cook for another 5 minutes until the vegetables start to soften.

Add the black beans, diced tomatoes, kale, vegetable broth, miso paste, chili powder, cumin, salt, and pepper. Stir well to combine.
5.
Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, stirring occasionally.
6.
Taste and adjust seasoning if necessary. Serve hot, garnished with fresh herbs if desired.

1 cup kale, chopped

1 cup carrots, diced

1 cup zucchini, diced

1 cup green beans, chopped
8.
1 red bell pepper, diced
9.
1 onion, chopped
10.
3 cloves garlic, minced
11.
4 cups low-sodium vegetable broth
12.
2 tbsp miso paste
13.
1 tbsp chili powder
14.
1 tsp cumin
15.
Salt and pepper to taste
