Instructions
1.
Heat olive oil in a large skillet over medium heat (about 2 minutes).

Add the diced zucchini, bell pepper, and yellow squash. Sauté for about 5 minutes until softened.

Add the turkey chorizo to the skillet, breaking it apart with a spatula. Cook for another 5-7 minutes until browned and cooked through.
4.
Stir in the black beans, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until heated through.
5.
Warm the low-carb tortillas in a separate pan or microwave for about 30 seconds.
6.
Assemble the tacos by placing the turkey chorizo mixture on each tortilla and topping with a dollop of reduced-fat sour cream.
