Instructions
1.
In a skillet, heat olive oil over medium heat (if using).

Add ground turkey, season with salt and pepper, and cook until browned (about 5-7 minutes).

Stir in shredded mozzarella cheese until melted and combined.

Prepare the vegetables by slicing cucumbers and dicing carrots.
5.
Serve the turkey mixture on rice cakes, topped with cucumbers and carrots.
6.
Enjoy with apple slices on the side.
