Instructions
1.
Preheat your oven to 400°F (200°C).

In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.

Form the mixture into meatballs, about 1.5 inches in diameter.

Place the meatballs on a baking sheet lined with parchment paper and bake for 20 minutes or until cooked through.

While the meatballs are baking, prepare the coleslaw by mixing the coleslaw mix with vinaigrette dressing in a bowl.
6.
Assemble your meal by placing lettuce leaves on a plate, topping with meatballs, and adding pickles, onion, and tomatoes. Serve with coleslaw on the side.

2 cups coleslaw mix (cabbage and carrots)

2 tbsp vinaigrette dressing (low-calorie)
